He is Craig Claiborne. He blasts anything instant or frozen, puts down chefs for blemished tomato wedges, seeds in the lemon quarters or machine-written menus. A Mississippi boy who won honors at the Swiss hotelkeepers school, he publicized shortening and gefullte fish before getting his job with the Times. Through the week, Claiborne eats for his readers. Weekends, he cooks for himself and friends. A spiced slice of his gastronomy life starts on page 70.
